Bush's Canned Blackeye Peas, 15.8 oz

Bush's Country Cornbread Hoppin' John Recipe

Two Southern favorites—cornbread and Blackeye Peas—come together in one great dish!

Ingredients

  • 2 cans (15.8 oz) Bush's Blackeye Peas
  • 5 slices of bacon
  • 1 medium onion, diced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 teaspoon hot sauce
  • 1 package (7.5 oz) corn bread mix
  • Salsa
  • Sour Cream

Directions

  1. Cook bacon in skillet until crisp; remove bacon and drain, reserving 2 tablespoons bacon drippings
  2. Cook onion and peppers in bacon drippings until tender
  3. Add blackeye peas and hot sauce and heat through
  4. Prepare cornbread mix using 9 x 13-inch pan; cook according to directions
  5. Cut into 2-inch squares; top with blackeye peas, salsa, sour cream and crumbled bacon
