BUSH'S Butter Bean Soup Recipe

Warm up winter with this deliciously easy tomato & Butter Bean soup.

 

Ingredients
  • 2 cans (16 oz) Bush's Large Butter Beans, drained
  • 1 cup finely chopped celery
  • 1 cup finely chopped carrots
  • 3/4 cup finely chopped onion
  • 3 tablespoons vegetable oil
  • 3 tablespoons all-purpose flour
  • 4 cups water
  • 1 can (14 oz) diced tomatoes
  • 1 teaspoon basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
Directions
  1. In large pan, cook celery, carrots and onion in oil until soft
  2. Add flour; cook and stir for 1 minute
  3. Gradually add water, stirring until smooth.
  4. Add remaining ingredients; bring to a boil
  5. Reduce heat; simmer for 20 to 25 minutes or until slightly thickened
